Get ready NOVA! Something authentically Italian is coming to a town center near you! This summer, Carbonara Italian Restaurant is slated to be opening its doors mid July in the Virginia Gateway town center in Gainseville, VA and Cappellini is slated to open at the end of September in the Brambleton Town Center in Ashburn, VA by no other than Chef Mike Cordero and his team!

Serving traditional old-school Italian classics, diners will be “entertained” and fed at the same time with showstopper dishes as the tableside chicken Parmigiano; table side “Carbonara Wheel” shipped from the region of Emilia- Romagna used to make a carbonara sauce in a Parmigiano Reggiano wheel and to top dinner off with tableside tiramisu. Now, that’s Amore! Buon Appetito!

Chef Mike Cordero shares with CiaoDC about his journey of over 50 years in the hospitality industry from a New York Pizzaiolo (Italian for pizza maker) to his award-winning Virginia restaurants today. Listen to interview!

“I turned my dishes into entertainment…the way I do it, I have a pan that I bake in the oven and the mozzarella. I marinate in a vodka sauce for hours…I bring the chicken cutlet right to the table and we bring the pan to the table, we slide the cheese and sauce right on the cutlet…the chicken stays crispy…it’s our number one seller. When we show this on social media it gets over 40 million views.” - Chef Mike Cordero

“Everything is made from scratch from the pasta to the bread to the dessert…our tiramisu assembled next to you…we build a whole tableside Tiramisu at the table - we bring the lady fingers, the cocoa powder…“There’s a lot of entertaining not just eating at my restaurants.” Chef Mike Cordero

“If there’s one thing we know to do in Italy is eat…we’re eating organic every day.” - Chef Mike Cordero

“I like making the Sunday Sauce for my family…I stick in the braciola and the Italian sausage and all the meats in the sauce for hours…you can’t get better than that…add some homemade wine on the table and you go it!” - Chef Mike Cordero
